It’s more than snacking but simple, satisfying and healthy (mostly!).
This isn’t about deprivation or discipline. It’s about food that works with your day, not against it. Meals that are easy to throw together, satisfying to eat, and light enough that you can get on with everything else you’d rather be doing.
Because sometimes the best kind of cooking is the kind that doesn’t feel like a chore, and the best kind of meal is the one that leaves you feeling good, not just full.
Mediterranean Bruschetta.

Open Sandwiches are the essential lighter meal from Poland right around the Baltic countries, and particularly associate with Scandinavia.
They can be absolutely anything you like and on any type of bread or biscuit. Variety is the key – shake it up and serve them with chutneys and pickles.
Light meals have long suffered from an image problem.
They’re often dismissed as boring, insubstantial, or destined to leave you rummaging through the fridge 20 minutes later.
But done right, they’re a quiet triumph – fresh, vibrant, full of flavour, and fast enough to fit into real life.
The Air Fryer is a great friend to lighter meals with substantial effect. Sweet Potatoes make a great base which can be topped with anything.
Here, peppered with spicy Sumac, surrounded with salad or spinach, spring onions, a slice of bacon, poached or fried egg and a good glug of Bloody Mary Ketchup.
Sausages, air fried in 15 minutes; potatoes, boiled in 10; sweet Fig Relish with a slight tartness, brimming with dried figs (60%) and made with cider vinegar and molasses – simmered lovingly for hours, spooned in seconds.
Wholemeal bread topped with creamy smashed avocado [add a spoonful of our Garlic Mayonnaise and a little sweet garden Mint Sauce to the avocado as you smash it – yummy!] – all topped with a runny egg … smiley face!
Sharing Platters.
Pork pies, salamis, cheese, tomatoes, pickles, perhaps a sausage roll or two. All you need to do is graze. Which pickle or chutney would you have with this?
A Stir Fry can be as easy as you like or as complicated – whichever sizzles your taste buds. Thinly sliced pork tenderloin marinated in orange juice, our Hoisin Sauce, a little Chinese 5 Spice then stirred with a few chopped veg (or packet of). Quick, simple, tasty.
[If you like a little ‘kick’, add a drizzle of our Habanero HOT Sauce … carefully!]

It was difficult deciding what to end this Light Bite Bonanza with. It has to be simple, certainly easy, with healthy roughage and powerfully tasty … so here it is:
Chilli Beans – made with 3 different types of bean, taking baked beans on toast to a whole new level.
