TIPS, TASTES & TANTRUMS

Make it a pleasure, not a chore.

Let’s begin by saying – if you want to avoid the tantrums, follow some of Team Stokes’ combined tips and natural tastes:

Christmas is meant to be joyful, not spent stressing in the kitchen. Here’s a few simple tips to help you stay organised, save time, and enjoy the day with your family.

6 sensible tips:1. Prep early … really early.
Chop veggies, make sauces, and measure ingredients the day before. Even small tasks done ahead add up to major time saved on The Big Day.

2. Choose 2 or 3 “hero dishes,” rather than 10.
People remember the roast or ‘the pud’, not the third or fourth side dish. Focus on a few standout items and keep the rest simple.

3. Use your freezer as your secret weapon.
Stuffing, gravy, pastry, red cabbage, cookie dough, even mashed potatoes can be made ahead and frozen. You simple defrost and ping for a fun-filled day.Did you know you can freeze gravy in advance and jazz it op on the day?

BEST GRAVY EVER:

  1. Soften an onion, carrot and celery (diced) in oil. Stir in 2 tbsp of plain flour, then 750 to 800 ml of chicken stock and two good glugs of Stokes Real Tomato Ketchup.
  2. Simmer for 10 minutes, blitz with a hand blender, strain into a jug to cool.
  3. Freeze.
  4. On the day, de-frost and heat to ‘piping hot’ in the microwave.
  5. Taste, season, taste, add Stokes Cranberry Sauce or Redcurrant Jelly, perhaps even Chilli Jam.
  6. Taste, ‘wow‘, serve.

You will have your best ever gravy with NO FUSS on the day.

4. Delegate like it’s a team project.
Assign roles: someone handles drinks, someone slices, someone sets the table. Christmas cooking doesn’t have to be a solo mission. Make it a group project and keep it fun.

5. Lay out your equipment in advance.
Roasting trays, foil, thermometers. Knowing where everything is reduces stress when the oven is full and timing matters … ‘ouch – oven gloves!!!’6. When in doubt, simplify.
A beautifully cooked basic dish beat an overcomplicated one. Give yourself permission to not make everything from scratch. Then, give everything a tasty flourish with a little help from Stokes.Don’t over-serve. It’s tempting to push the boat out with side dish after side dish, and each one enormous. It’s just too much.

This is a delicious Festive Traybake. It’s colourful, lush, and relatively simple, looking after itself in the oven as the Turkey rests on the side.
