Summer Sensations

Enjoy this ‘summer holiday‘ of flavour and fun. Whether you are staying at home for ‘summer in the city‘, or heading for the countryside and ‘walking on sunshine‘, perhaps the beach, ‘under the board walk‘.Fish ‘n’ Chips on a British beach with the waves playing percussion with the pebbles – that’s all of your Summer Sensations in one.

Sight, sound, smell, touch, taste – and that mysterious ‘umami’ – summer.Chipotle Ketchup delivers umami in spades (as well as on burgers).

It is a twist on the best – brimful of sweet, juicy tomatoes with a smoky, spicy kick! Chipotle Chillies are Jalapenos left to ripen on the plant to a deep red, before being smoked, giving them their distinctive flavour – oooo mammi.

Find other ‘chuppy’ sensationsHERE.Garlic Mayonnaise, but not like anything you might previously have called  garlic mayo. Instead of a pungent kick, ours is a gentle, velvet-smooth aioli-styles mayonnaise, supporting the flavours of summer rather  than fighting them.

Find other marvellous mayosHERE.Stokes Habanero HOT Sauce is guaranteed to ‘tickle everything’. It is pure ‘sensation in a bottle’.

It’s a clever sauce of hot, fermented Habanero chillies balancing intense depth with a subtle fruity finish. It turns a gentle minced beef into a fiery chilli in a shake and a stir. And, what it does to chicken wings is pure magic.

Try another Chicken Wing creation, a recipe from Resident Chef, Andy. He uses our Korean BBQ Sauce to  turn these simple wings into an Oriental pleasure. Recipe – HERE.

Simply Summer

Food doesn’t have to be complicated to be absolutely delicious and a pleasure to enjoy with family and friends.

Our delicious Béarnaise-like mayonnaise is perfect with these Crevettes and pan-fried Cod. Punchy Tarragon and our Dijon Mustard works so well with our Real Mayonnaise. Served with samphire and new potatoes – simply ‘wow‘.Consider the simplicity of Mediterranean cuisine from coastal Spain, France and (here) Italy. Shaghetti alle Vongole.

This is as Italian as it comes and, as such, has simple ingredients that marry with ease and taste amazing – rather like Stokes! Serves 2 lucky diners.

You’ll Need

  • 500g small, sweet clams, lightly scrubbed clean (lose any open ones)
  • 2 big garlic cloves, crushed and sliced
  • 150ml white wine
  • 2 tsp of Stokes Mustard & Dill Sauce
  • 140g dried spaghetti
  • extra virgin olive oil
  • a good handful of chopped flat parsley

Here’s How

  1. Start cooking the pasta.
  2. Coat the garlic with good olive oil, salt and pepper. Cook gently until it just starts to brown.
  3. Add the clams. Pour in the wine. Lid on.
  4. After 3 or 4 minutes the clams will start to open.
  5. Give the pan a gentle shake until they’ve all opened.
  6. Take the pan off the heat. Discard any clams that haven’t opened.
  7. Drain the pasta, keeping about a cup of the cooking liquor.
  8. Add the pasta to the clams. Stir everything together with the parsley leaves and about half the cup of reserved pasta liquor (this will give a creamy thickness to the sauce. Add more if needed).
  9. Absolutely NO CREAM

Finally, on the subject of summer simplicity look no further than a colourful Picnic Platter. Enjoy more with a scoop or two of your favourite Stokes Relishes & ChutneyHERE.

BBQ Umami - Product Review

Ooooo, Mammi !

It’s  those little extra bursts of flavour playing hide and seek around your taste buds that you just can’t quite place – that’s ‘umami’.

Umami is one of the five basic tastes, along with sweet, sour, salty and bitter taste sensations. It’s most commonly defined as ‘savoury’, but the characteristics of umami can also be described as ‘meaty’, ‘complex’ or even just ‘deliciousness’.

We like to call it – ‘Stokes’.Original BBQ Sauce. Everything a BBQ sauce should be. Sweet, thick and smoky. Perfect to use as an accompaniment, marinade or a dipping sauce.

The Great Taste Award judges commented “A lighter-style barbecue sauce. Sweetness and smokiness are well-judged, and it has a rich, inviting colour. It lingers well on the palate and is a welcome alternative to the over-punchy bbq sauces typically found on the market.”Hot & Spicy BBQ Sauce was used as part of a marinade, knocked back with British rapeseed oil and orange juice.

Hot & Spicy BBQ Sauce is a sweet, smokey flavoured chilli BBQ sauce. Heat develops as an after flavour from the flecks of chilli seeds. It makes a fantastic marinade for chicken and pork, as pictured here.Korean BBQ Sauce was originally produced as a Limited Edition sauce – now, we just can’t make enough of it.

It is a sweet and fruity barbecue sauce with rich dark brown sugar, soya sauce, and sweet Mirin wine. The perfect sauce for marinating meat & vegetables, adding to a quick and healthy stir fry or to enjoy as a dipping sauce. All these and other BBQ Sauces, Ketchups and other Sauces – HERE.
