  • 2 or 3 carrots
  • 1 or 2 parsnips
  • 1 onion
  • 1 celery stick
  • 3 large vine tomatoes
  • 1 fennel bulb
  • A punet of mushrooms of your choice
  • 800g stewing steak
  • Stokes Sauces + 2 beef stock bouillons

As with our sauces, we are using fine seasonal vegetables to add colour and flavour to this simple beef stew recipe. Serve it with buttery mashed potatoes.

Method

  1. Pre-heat your oven to 160C/gas 3
  2. Cut all the vegetables and tomatoes into thick chunks, de-coring the parsnip and fennel.
  3. Soften them in a large casserole in half-and-half butter and oil. Then stir in 2 tbsp of flour, 3 shakes of ketchup, 1 of brown sauce and 2 spoons of our creamed horseradish.
  4. Stir in about 500ml of boiled water, absorbing all of the ingredients, simmer and add the 2 beef stock bouillons. Season and add the beef.
  5. Top the water up to just cover the contents.
  6. Cover, and put the casserole in the oven for 2 and a half hours.
  7. Remove, lid off and simmer until the sauce thickens and the flavours are amazing.
  8. Enjoy with really buttery mashed potatoes.
