  • 4 Field Mushrooms
  • 1 Red Onion, sliced
  • Fresh Spinach
  • Dried Oregano (pinch)
  • Free-range eggs, 1 each
  • Garlic, 1 clove

EASY ‘Meal-Making’ Pomodoro Sauce is a delicious combination of juicy sun-ripened tomatoes, garlic, Cretan Koroneiki extra virgin olive oil and Herbes de Provence.   1. In foaming butter, fry the mushrooms. As they soften, add the spinach and cook for just 2 minutes before setting them aside.
  2. Toast thickly sliced bread under the grill, then rub one side of each with the garlic clove.
  3. Spoon EASY Pomodoro over the bread, topped with sliced onion, spinach and mushrooms, crowned with a softly poached egg.
