What you'll need
- 1 Baguette,
- 4 Field Mushrooms
- 1 Red Onion, sliced
- Fresh Spinach
- Dried Oregano (pinch)
- Free-range eggs, 1 each
- Garlic, 1 clove
EASY ‘Meal-Making’ Pomodoro Sauce is a delicious combination of juicy sun-ripened tomatoes, garlic, Cretan Koroneiki extra virgin olive oil and Herbes de Provence. Method

- In foaming butter, fry the mushrooms. As they soften, add the spinach and cook for just 2 minutes before setting them aside.
- Toast thickly sliced bread under the grill, then rub one side of each with the garlic clove.
- Spoon EASY Pomodoro over the bread, topped with sliced onion, spinach and mushrooms, crowned with a softly poached egg.
