What you'll need
- 2 x Free Range Eggs
- 500g Mashed Potato
- 100g of flour
- 2 x Ripe Avocados
Brunch or Lunch – it just gets better and better!
1) Mix 500g of mashed potato with 100g of flour, 1 egg, and 3 tbsp of Red Onion Marmalade. If the mixture is too wet, add more flour; too dry, add a drop of milk.
2) Put a little flour on your hands and make patties ready for frying.
3) Top the cakes with a couple of ripe avocados mashed with our Garlic Mayonnaise. Boil or poach an egg each and serve with Chilli Jam or our deliciously thick Tomato Ketchup.
