What you'll need
- 4 Ready Bought Meringue Nests
- 300ml Double Cream
- 1 teaspoon Vanilla Essence
Add the vanilla essence to the double cream and whip until slightly thick. Crush the meringue nests and gently fold them into the cream with roughly half a jar of lemon curd. Serve chilled with an extra dollop of lemon curd on top!
