Sensational Summer Salads

One of the joys of Summer is the pure joy of fresh, deliciously colourful salads. Fruits, leaves, grilled chicken, prawns, tinned tuna, dressings, zest, crumbled cheese – great taste combinations for a beautiful plate of food. Even a simple Caprese: tomato, Mozzarella & basil, is a flavoursome sight to behold.


Chilli Prawns & Watermelon


Coat a dozen juicy prawns with our sweet and zesty Chilli Jam then grill them under a high heat for just 2 minutes each side and set them aside on a sheet of kitchen paper.

Assemble a salad of mixed leaves, cool cubed watermelon and crunchy blueberries. Add the chilli prawns and crumble salty feta cheese over the top before dressing with our fruity Mango & Orange Dressing.

You could use our Caesar Dressing instead, for a flavour filled take on a Caesar Salad.

Chicken & Avocado Salad


If you have leftover chicken from a Sunday Roast, this makes a tasty Monday evening supper or lockdown lunch.

If you don’t have leftovers, brush a couple of chicken breasts with our Chipotle Ketchup, then grill or roast them. Let them cool, then tear the meat into tender strips.

Make a salad of mixed leaves, chopped fresh parsley and coriander, sliced cherry tomatoes, slices of red onion and beautifully ripe avocado.

For the dressing: match the smoky chipotle heat you coated the chicken with by whisking together a splash of balsamic vinegar, 1 tbsp of Chipotle Ketchup, 4 of 5 tbsp of olive oil and a little orange juice.

You could give it a Creole twist by using our NEW Bourbon & Cajun BBQ Sauce and a squeeze of lime instead of the ketchup.

Simple Egg & Tuna Salad


Boiled and cooled potatoes tossed in our Creamed Horseradish Sauce, combined with chopped tomatoes, green & red pepper, shallot and a few twists of black pepper. Tinned Tuna (in spring water, drained) with Stokes’ velvety Real Mayonnaise spooned through it.

Finished with quartered hard boiled eggs on top – now that’s a simple lunch, particularly with a topping of our aioli-styled Garlic Mayonnaise on top.

You can upgrade this to a classic salad niçoise by adding cooked, cooled French beans, anchovy fillets, capers and olives.

Great Tips for Great Dips & Mayo Twists


All good dips and saucy twists start with a reliable base – and there’s nothing more reliable than Stokes Real Mayonnaise. Add thin slices of crisp streaky bacon and chopped spring onions for ‘baconaise’.
